Dough temperature:

26-28 °C

Resting time:

15 minutes.

Scaling:

Divide the dough into portions:
550g for a basket-shaped loaf.
400g for a 21×12 cm loaf pan.

Proofing:

Temperature: 30°C, Humidity: 75%, Time: approx. 40 minutes.
Cut the tops of the loaves as desired.

Baking temperature:

230°C / 210°C with steam.

Baking time:

Approx. 50 minutes.
